Vegetarian Green Chile and Pinto Bean Layered Mexican Casserole. I used red pepper,half an onion, substituted a dash of curry powder for the garlic and cumin. I couldn't find the chilis, so I bought canned jalepenos, took out the seeds and rinsed them and only did one layer on the bottom. Overall a SUPER filling dish. I liked the heat the jalepenos brought to it. Served tortilla chips on the side to use to scoop it up. Overall a cheap and pretty easy one dish meal. December 01, 2014 at 12:44AM
