Potatoes aren't inherently bad or nutritionally void or even all that boring — potatoes are just, well ... misunderstood. That's what Ferris Jabr argues in a recent article in Modern Farmer. He points to the wealth of delicious potatoes grown in South America and the potato's famine-averting legacy as proof.
